I got this simple recipe from my friend Kara, it seems to be the official snack of our kids’ high school. Apparently it’s so addictive that they call it crack, so I don’t even allow myself to try it. If I did, I’m sure I would add peanuts or something salty. This is a recipe that should be doubled, if not tripled, before leaving for a weekend tournament and a 12 oz box of cereal isn’t quite enough for doubling. Now you know.
1 c smooth peanut butter
1 c corn syrup
1 c brown sugar
6 c Rice Chex cereal
Heat first three ingredients over medium until mixed well but not boiling. Add Chex cereal and stir to coat all pieces. Pour onto waxed or parchment paper and let cool completely, turning over once to let both sides set. Store in an airtight container.
